Chris tested his limits today.
He drove to both Costco and Fresh Market, shopped, fielded phone calls, and basically found out how much he could do. Now, he's pooped.
Happily, he got all the ingredients for Alex's favorite dinner and stayed in a relaxed position while talking me and Al through the preparation. The result was a dish perfected over his years of cooking.
For your own recipe box:
Chop finely three strips pork bacon (no turkey!) and fry slowly 'til crisp. Put crunchy bacon bits in a medium mix bowl without snitching too many, add three raw eggs, two tablespoons Parmesan, two tablespoons creme fraiche, a half cup of heavy cream, pepper to your sense of rightness, salt if you don't salt pasta water as much as I do, and half a cup of chopped parsley. Beat 'til mixed well with a fork and dump onto freshly cooked, hot linguine (3/4 lb.) in a pot, and heat on very low while stirring constantly, stopping just before it turns into creamed scrambled eggs (stop when it thickens).
Serve with freshly ground pepper across the top and Parmesan available for the cheesy people like me.
Alex declared that he had achieved a "food coma" upon completion of his bowl. Success!
(This dish was specially requested by Alex to Carbo-load before a crucial runoff tomorrow morning as he tests his own limits. His time will determine if he will be on the 4 x 8 relay that will go to the State championship. He is within 2 seconds.)
